Just dowbload OFW of which ever firmware you running as CFW, get a flashdrive, make a folder names ps3 in the root of the flashdrive, then another foder in that one named UPDATE.

Turn on ps3, put in the flashdrive. go to update, then update via removable device.
The OFW on your flashdrive should come up. i recommend doing this via recovery system.

So i should, go back to 3.55, and just upgrade to 3.56? And i guess i should delete my backups using gaia manager, since 3.56 ofw doesnt have an ftp server. Should i also delete any homebrew such as backup managers, pkg psn games, and direct boot games before i make the switch?

Im not 100% sure, but i think you should delete all of that since its not recognized in a non hacked firmware. Besides if you go back you wont have use for these things taking up space, so just take everything off :p
