Depends what type of rpg, if you're looking for old school turn based go for
Final fantasy 10, one of the best games on ps2
Final fantasy 12
Suikoden V Amazing story
For turn-based RPGs, I adore the "Xenosaga" series. These games (there are three in all) each have their own battle quirk. Number 2 was the weakest in terms of battle system (a lot of people feel it killed the series, which I am still quite sad about), but the story is amazing. If you play games for story, give these a try. They are so complex that, even after multiple play-throughs, I still discover new aspects.
If you're into complex item-creation systems, I'd check out the "Mana Khemia" games. I haven't played the second one yet, but I've had tons of fun with the first. Since these games are related to the "Atelier" series, creating items, weapons and armor through alchemy is essential to advancing the story as well as to leveling up your abilities (each character has a grid system in which you enter items in order to unlock things).
For RPGs and similar adventures with a real-time battle system (something you might enjoy since you list "Kingdom Hearts" and "Ratchet and Clank"), give "Tales of the Abyss" (one of my favorite "Tales" games) a try. "Okami," though not strictly speaking an RPG (it's an action adventure with similarities to Nintendo's "Zelda" series), is a really fun game, too.

Okami Legend of Zelda-style gameplay (no fighting-based XP or upgrades, very open-ended, lots of side quests), very heavily based on Japanese mythology. Beautiful, beautiful graphics -- the whole game looks like it was painted with a calligraphy brush. Special skills are used by painting with your "Celestial Brush," which really does mean you have to draw on screen. Very fun, very underappreciated.
Valkyrie Profile 2: Silmeria Has the EXP, leveling, and gear elements of traditional RPGs, with a real-time battle system. Lots of playable characters with the Einherjar character system. In-depth skill system based on equipped gear. Fun combat system, though it can be confusing at first. Oh, and it has pretty graphics.
Shadow Hearts 1-3 Traditional turn-based RPG, but combat uses a "Judgement Ring" system and characters are able to turn in to "fusion monsters," changing their skillset and making them much more awesome.
There are already a lot of great suggestions here, but these three are a little different and some of my favorites.![]()
